The staff of the shops are recruited from all kinds of fields. A special place is reserved for art or architecture students.
Former members included Didier Hofmann, Jean Claude Hausman, Serge Henri Pierot, Gerard-Baptiste and many others. Some of these staff members went back to pursue a career in architecture, others stayed in the food business.
